Lamb, Wild Mushroom and Black Pudding Stew
It looks a bit of a dog’s dinner this one, which is probably not surprising, considering I had to do this on the fly.
It was going to be a hotpot, instead of a stew, but when I went to get the potatoes, I realised there weren’t any left, so had to go with a stew instead.
The lamb, thinly sliced potato (if I’d had any), mushrooms and black pudding should have been in layers, with stock poured over and left to cook in the oven for a couple of hours. Without the potatoes to help form a structure, everything mixed together and the black pudding went a bit soggy, which wasn’t too pleasant. The rest of the dish didn’t taste too bad, but this is one I’ll have to revisit, when I actually do have potatoes in the cupboard!
